Taiyuan City (太原市), the capital of Shanxi Province, China.
It is a city where rugged northern spirit meets thousands of years of cultural depth.

No visit to Taiyuan is complete without tasting its bold, comforting cuisine. The city is the proud home of 刀削面 (knife-cut noodles) — thick, chewy ribbons of dough shaved directly into boiling water.
